Apricot Sauce with Dried Fruit
Ingredients
3 each Lemons, zested & squeezed
3 each Limes, zested & squeezed
1/3 cup Honey
1/3 cup Lemon Juice
I/4 cup Apricot Preserves
2 Tbls Cognac
1/3 cup Apricot, dry, halves, thin sliced *
¼ cup Raisins
8 each Prunes, pitted & cut into ½ inch pieces
2 each Peach Halves, dry, cut into thin strips
Directions
- In large bowl, mix all ingredients together. Cover bowl with plastic wrap and let rest for an hour before serving. May keep refrigerated for two weeks.
Notes
* Dried fruit may be sliced or chopped in this recipe depending on look and texture desired. If cutting by hand, oil the blade of knife first to prevent fruit from sticking or fruit may be chopped by using a food processor. Cognac would be a great addition to the food processor to prevent fruit from gumming up around the blade. The types of dried fruit in recipe may be switched depending on need or favorability.
