Onion soup
5-6 large onions, slivered (about enough to fill instapot) 1.5 qt (1.5L) beef broth/stock 0.5 qt (0.5L) chicken broth/stock 6 tablespoons butter 1/2 cup red wine 2 thyme sprigs 1 bay leaf
Set pot to sauté. Add butter to the instant pot. Add onions to pot and season with salt&pepper, stirring frequently until onions begin to soften and change color (white to clear).
Put lid on instapot and set to seal. Turn pot to manual setting on high for 20 minutes. At end of time, vent steam. Remove lid and set to sauté (medium or high), reducing liquid in onions until they are a nice beautiful brown color. I reduce liquid by about half before moving on and this can take up to an hour depending on how hot i have my instantpot and how juicy the onions are.
Add 1/2 cup red wine and simmer until alcohol smell is gone. Add all stock/broth & herbs to pot and simmer 10-15 minutes.
