Roasted Red Pepper Spread with home-made Crostini

##Ingredients 1 each French Baguette
½ cup Extra Virgin Olive Oil
To Taste Sea Salt & Black Pepper, fresh cracked
##Instructions 1. Pre-heat oven to 400’F 2. Slice baguette to 1/8 th inch thick slices, ¼ inch if baguette has large air bubbles, lay slices side by side on a sheet tray. 3. Lightly drizzle with olive oil, sprinkle on salt and pepper. * 4. Bake 5 minutes or until desired golden crust is achieved, remove from oven & cool. ##Notes * garlic and/or herbs may be added to the crostini at this time, if desired
#Roasted Red Pepper Spread
##Ingredients 2 cloves Garlic
1 jar, lg Roasted Red Peppers
4 oz Cream Cheese, softened
¼ cup Cottage Cheese, low-fat or whole
2 tsp Dill, fresh
4 tsp Lemon Juice, fresh preferred
##Instructions 1. In food processor, mince garlic followed by red peppers. Add cream cheese, cottage cheese, dill, & lemon juice. Process till smooth and serve in small bowl along with crostini.
